Ingredients for 4-5 Servings

  • 4 cups
    Beef stock
  • 2 cups
    Tomato juice
  • 1/4 cup
  • 1/2 cup
    Olive oil
  • 2 lbs
    Chuck roast
  • 3
    Potatoes, medium, chopped
  • 4
    Carrots, chopped
  • 1
    White onion, chopped
  • 2 stalks
    Celery, chopped
  • Fresh thyme

  1. Season chuck roast as desired. Chop all vegetables.
  2. In a large slow cooker, add stock, tomato juice, flour, and olive oil and mix well. Then add in roast, vegetables, and fresh thyme.
  3. Let cook on medium-high for 3-4 hours, or until meat is tender.
  4. Note–If the soup broth is thin, mix 1 tbsp cornstarch with 1 tbsp of broth, then add. Repeat until desired consistency.
